Okay, when I first became a vegan I was petrified that I would never be able to enjoy a “hearty” meal again. Gone were the days of feeling fully satisfied and enjoying a GREAT dinner after a long day, but I was SO wrong! Even you are you aren’t vegan yet or you still considering going vegan, give one of these recipes a try! While they are not all my hearty vegan recipes, they are all delicious and well worth a shot!

I’m lucky enough to be part of a huge network with the publisher of the Kitchen Queen Eats Clean Blog! Lauren is absolutely amazing and her recipe for Mac and Cheese is out of this world, 100% vegan, and PACKED with vitamin B12 – a total win! What I like to do is follow here recipe to a T, then at the end I mix in a cup or two of peas! I know it sounds crazy but sweet peas and savory mac and cheese makes for an amazing combo, visit her site to get the full recipe!
Okay when I first read about peanut stew on the site, I was not quite sure it was going to be good! Seriously mixing Peanut Butter with tomatoes? Oh my goodness was I 100% wrong! Seriously this was an AMAZING dish that I would end up making again and again! I even made it for a party it it went over really well!

Okay a quick note that the recipe on the site is not 100% vegan it does include cheese and sour cream as toppings so I just omit those to keep it veg friendly! But when I tasted this fine piece of heavenly bliss, I couldn’t fault the recipe for… well anything! That picture is some of that chili topped on baked potato, so it’s a vegan chilli stuffed baked potato, the potato and the chili are super easy and amazingly simple! A few weeks into my journey I was dying for a big Sloppy Joe sandwich – hey I can have cravings right! Anyways I stumbled up this killer Recipe from Chef Chole! I’m sharing her pic because mine didn’t come out nearly as pretty but I would venture to guess it’s was just as delicious! The best part? It uses soy sauce which I have a minor addiction with so I was very happy to taste the amazing vegan sandwich and feel full and satisfied when I was done! Alright I’ll finish with a little shameless self promotion! This little pizza takes the cake in my opinion, it’s got a creamy cashew cheese sauce, roasted veggies and it’s 100% plant-based, it’s a healthy tasty pizza and that really got my mind going! Full disclosure the sauce recipe I posted is pretty good but it being tweaked a little every time I make it so feel free to use your own favorite vegan pizza sauce recipe – or store bought if you’re looking for convince! I’ve got the whole recipe in this post over here!
