Healthy Vegan Desserts and Snacks

When I first went vegan I was already eating pretty healthy, but I did like to indulge in dessert from time to time.  After a couple weeks of being plant-based , I realized that if I was going to make this last I was going to need to locate some healthy vegan desserts and snacks ASAP!

Today I wanted to share with you some of my absolute favorite vegan sweets that keep me going but don’t ruin my healthy lifestyle!

Banana Cookie Dough Ice Cream!

Okay when I discovered this, I was tickled because it tastes so freaking amazing!  Banana ice cream is super simple to make and it’s 100% vegan.  Freeze a couple of bananas and blend them up in a food processor or blender until they are smooth, simple as that.  I’ve named this concoction bananascream – even though many other’s have discovered it haha!  I then like to kick it up a notch with some protein backed “cookie dough”.

It’s basically a frozen banana flurry, but then I added in little piece of chocolate chip chickpea cookie dough from a recipe I found on FitSugar.com.  When I first read about chickpea cookie dough, I thought it sounded gross but after giving it a shot I learned it’s AMAZING!  Here’s the recipe for the cookie dough, it makes a batch of “cookie dough” then then I pull out small pieces (sort of like you would find in a Blizzard from DQ) and put them in the ice cream.

INGREDIENTS

1 cup chickpeas, skins removed, patted dry
1/3 cup natural peanut butter
1 1/2 teaspoons vanilla extract
2 tablespoons agave nectar
1/3 cup vegan chocolate chips

DIRECTIONS

Blend everything except for the chocolate chips, once it’s a smooth cookie dough like ball, fold in the chocolate chips and enjoy as a dip or in your banana ice cream.

Dehydrated Fruit

Now to be  honest I don’t think that dehydrated fruit is as healthy as regular fruit with the water still in it, but I think it’s a heck of a lot healthier than some of the other options out there (and some dehydrated fruits tasted like candy!).  If you decided to buy dehydrated fruit from the store be careful because often times they have added sugar and oils to make them even sweeter!

I like to make my own at home with my dehydrator – I know that dehydrators aren’t the cheapest investment but they are so worth it.  I asked for mine for Christmas and that helped this college kid save a few bucks.  Somes of the fruits that I like to dehydrate include

  • Apples
  • Bananas
  • Kale – not really a fruit but delicious nonetheless  (Add a little olive oil and salt to make chips)
  • Mangos
  • Fruit Leather (Healthy fruit roll ups made from fruit Purée!)

But the number one discovery I made was WATERMELON!  I wasn’t sure about it at first but it creates little chunky of heavenly sweetness, it’s what you see pictured above!

LÄRABARS

Okay, these are heavenly little bars that are usually vegan, gluten free, RAW and only made up of a few whole food ingredients  all of which I can pronounce!  WIN!  Be careful when you buy them though because there are a couple varieties I believe are not certified vegan!  (These varieties usually have vegan chocolate chips but are proccessed in a plant that contains dairy, which I PERSONALLY do not mind at this point in my vegan journey)

I’ll share a quick story about why these bars and the company are so great! When I got home a couple of days ago, the company had actually sent me a FREE box of these amazing little treats, and even in my favorite flavor – Cherry Pie!  I had simply reached out to them and told them their bars ROCKED and they sent me a hand written thank you note, it only gave me more faith in the value of these bars and the company!

Shakeology

Okay I’ve been using this stuff for 2 years and it is seriously my vice!  It comes in vegan flavors and when you blend it up, Shakeology seriously tastes like a milkshake!  It’s a whole food vegan blend, I add in some natural peanut butter, bananas and almond milk and then I’m good to go!

I usually drink it first thing in the morning and it keeps me feel and curbs my sweet tooth – or after dinner if I’m trying to avoid a sugar packed dessert!  Like seriously, how can you beat health chocolate, oh wait YOU CAN’T!

Vegan desserts and snacks don’t have to be complicated or filled with sugar, they can be simple and healthy.

Hi Zach!

Yummy! I’m not vegan, but when it comes to desserts, I rather have a vegan one than anything else! Just because they do taste better.

I love dehydrated fruits for a snack, but never gave it a shot to do it myself. I’m learning how to make Kale chips as of this writing. I rather munch on veggies like raw snow peas, edamame, and such.

As for the sweets, I don’t crave much, but I like things that are freshly made, rather than in a box or a container.

Thanks for the tips and enlightening folks that there is a healthier way to eat.

Hey Donna,

Glad you enjoy vegan desserts, it’s crazy how much sweeter they can tast – especially since they are often more “natural” so to speak!

You should def considering get a dehydrator, they will seriosuly make your life amazing, they make stuff so crunchy – even fruit!

Congratulations on eating healthy. I’m not a vegan but I do eat healthy all the time, always have and always will. Maybe that’s why I’ve always been the same weight all my adult life.

I have always wanted to make the cookie dough but have been too scared. I know…saddle up and just do it! I love kale chips and the chocolate shakeology ice cream cups I posted. I grab one out of the freezer and I’m instantly transported to heaven! Confession: I am obsessed with Larabar! Like woah. Can’t. Get. Enough.

Never in a million years would I have thought to try to dehydrate watermelon! I may have to give it a try… I love eating watermelon! (oh..and … shhh… I heart larabars too!)
