Vegan Fix: My 5 Favorite Hearty Vegan Recipes

Okay, when I first became a vegan I was petrified that I would never be able to enjoy a “hearty” meal again.  Gone were the days of feeling fully satisfied and enjoying a GREAT dinner after a long day, but I was SO wrong!  Even you are you aren’t vegan yet or you still considering going vegan, give one of these recipes a try!  While they are not all my hearty vegan recipes, they are all delicious and well worth a shot!

1) Kitchen Queen’s Mac and Cheese!

I’m lucky enough to be part of a huge network with the publisher of the Kitchen Queen Eats Clean Blog!  Lauren is absolutely amazing and her recipe for Mac and Cheese is out of this world, 100% vegan, and PACKED with vitamin B12 – a total win!  What I like to do is follow here recipe to a T, then at the end I mix in a cup or two of peas!  I know it sounds crazy but sweet peas and savory mac and cheese makes for an amazing combo, visit her site to get the full recipe!

2. The Vegan Stoner’s Peanut Stew

Okay when I first read about peanut stew on the site, I was not quite sure it was going to be good!  Seriously mixing Peanut Butter with tomatoes?   Oh my goodness was I 100% wrong! Seriously this was an AMAZING dish that I would end up making again and again!  I even made it for a party it it went over really well!

One thing I do change, I’m not a big red onion fan so that is omitted in my version of the recipe!  Visit the Vegan Stoner’s Blog to get this awesome recipe!

3. Damned Delicious’s Quinoa Chili

Okay a quick note that the recipe on the site is not 100% vegan it does include cheese and sour cream as toppings so I just omit those to keep it veg friendly!  But when I tasted this fine piece of heavenly bliss, I couldn’t fault the recipe for… well anything!  That picture is some of that chili topped on baked potato, so it’s a vegan chilli stuffed baked potato, the potato and the chili are super easy and amazingly simple!  The recipe says to cook on the stove top but I simply make it in a slow cooker all day and let the flavors meld!  If you want the full recipe you can visit Damned Delicious Here!

4. Chef Chole’s Hawaiian Sloppy Joes

A few weeks into my journey I was dying for a big Sloppy Joe sandwich – hey I can have cravings right!  Anyways I stumbled up this killer Recipe from Chef Chole!  I’m sharing her pic because mine didn’t come out nearly as pretty but I would venture to guess it’s was just as delicious!  The best part?  It uses soy sauce which I have a minor addiction with so I was very happy to taste the amazing vegan sandwich and feel full and satisfied when I was done!  To get the full recipe visit Chef Chole’s awesome site!

5. My Portabella Mini Pizzas!

Alright I’ll finish with a little shameless self promotion!  This little pizza takes the cake in my opinion, it’s got a creamy cashew cheese sauce, roasted veggies and it’s 100% plant-based, it’s a healthy tasty pizza and that really got my mind going!  Full disclosure the sauce recipe I posted is pretty good but it being tweaked a little every time I make it so feel free to use your own favorite vegan pizza sauce recipe – or store bought if you’re looking for convince! I’ve got the whole recipe in this post over here!

Stop Worrying, Start Living

I know that people say life’s to short to worry, but I would like to spin it and say life is too long…to spend it full of worry!  I’m not sure how you deal with anxiety, but for me being anxious, worried, or concerned about any situation makes me feel like every day is 10 times longer than it is.

When you get worried and nervous time seems to slow down, so my argument is that if you cant wrap your mind around life being to short, then try and think about the AWFUL waiting time that comes with being stressed.  Do you want to have a long life full of worry and stress?

I’m aware that this is a shorter posted that I have written, and that it’s not 100% health and fitness related, but I firmly believe that your health is related to your mental state.  When you spend hours of your day getting caught up in stress, concern, or your mistakes you’re not living a healthy life.

In my life I have made a lot of mistakes, and I’m sure you have to, but there is nothing that worry will change.  Think back to the last big mistake you made – didn’t the problem eventually resolve itself?  Did constant concern or worry fix the problem?  99.99% of the time the answer is yes the problem was resolved and no worrying wasn’t the answer!

So this week, take some time to let go of your mistake, getting hung up on them won’t change anything, and letting them go will give you everything!  Also remember to take a few moments to just enjoy the little things. For me, I can worry about work, school, and my businesses but if I don’t take a few moments to just chill on the coach with my dog then life just seems dull!


If you don’t take some time to just enjoy life, it gets way to stressful!  RELAX!

You can live a happy life starting right now, if you choose to!

P.S. I firmly believe in this concept, and that picture at the top is MY tattoo!  It may hurt today, but it will make you stronger tomorrow!
